Will this battery and harness work in a Razor SX500 dirt bike?
Yes, it looks like the Razor SX500 Dirt Rocket will take the same 36 volt battery pack and universal harness as the Razor EcoSmart Metro.
What are the batteries made of? Are they lead-acid, nickel-metal hydride (NIMH), or what?
These are sealed lead acid (SLA) batteries.
Are the 7 Ah batteries the same size as the 12 Volt 9 Ah batteries?
Yes, the 7Ah batteries are the same physical size as the 9Ah batteries, but the 9Ah batteries have a higher capacity so you can get more run time between charges!
What are the dimensions of each battery? Mine takes 3 and each is about a 3 1/2 X 6" x 3 1/2 high. Looks like what I might be looking for my Voy Electra 88911 Phantom??

Height: 3-3/4"
It seems the height of these batteries is a little taller than the ones in your scooter. If the batteries in your scooter are 7Ah or 9Ah, see if there's enough space above them to fit the 3.75" height batteries instead. If your batteries are not 7Ah or 9Ah, you might have better luck searching for a direct replacement battery by searching for whatever the Ah rating is.

Do I need the harness, if these are just replacement batteries for my existing ecosmart?
That would entirely depend on how the old batteries were connected. The majority of the time, the terminals are soldered on and in that case may be difficult to reuse. If your battery terminals are clean and not soldered on, you shouldn't need to replace the harness.
